Flame at Discovery Primea offers a special Fire & Flavor menu featuring Canadian beef from June 7 to July 7. Culinary collaboration with Canada Beef.
Discovery Primea, in a prestigious partnership with Canada Beef and the Canadian Embassy of the Philippines, has officially launched Fire & Flavor: A Culinary Collaboration. This exclusive culinary showcase celebrates the bold character and high quality of premium Canadian beef, marking a significant milestone in the culinary world.

The preview, an exclusive event held at Flame, the hotel’s iconic restaurant, brought together representatives from Alberta, Canada, members of the media, and key personalities from the culinary and hospitality industries, offering a unique and privileged experience.
“This collaboration comes to life through a menu that honors the richness, versatility, and signature flavor of Canadian beef — and gives it the spotlight it deserves,” said host Issa Litton in her opening remarks. “This isn’t just a launch — it’s a celebration of shared values, craft, and the joy of great food.”
Guests were welcomed by David Pardo Ayala, General Manager of Discovery Primea, who emphasized the natural fit between Canada Beef and Flame. “With the expertise of Chef Luis Chikiamko and the power of our Josper oven, we had everything we needed to bring out the best in Canada Beef,” he said. “We’re proud to be working together on this flavorful collaboration.”

Special guests included The Honourable RJ Sigurdson, Minister of Agriculture and Irrigation of Alberta, Canada, who spoke about Alberta’s leadership in sustainable beef production and the value of building lasting agricultural partnerships and representing Canada Beef, Albert Eringfeld, Vice President of Export Market Development.

“We’re thrilled to kick off this exciting collaboration with Flame — an exceptional restaurant that mirrors our passion for quality and creativity,” said Albert. “It’s a proud moment as we continue to strengthen our presence in the Philippines and share unforgettable dining experiences built around premium Canadian beef.”

A multi-generational cattle producer representing Alberta’s ranching community, Brodie Haugan, introduced a video presentation that offered a closer look at the care, passion, and precision that go into every cut of Canadian beef. He also spoke about the values that shape Canadian ranching — animal care, sustainable practices, and a deep-rooted commitment to excellence.
The room included familiar faces from the Embassy of Canada, such as Diedrah Kelly, Executive Director for the Indo-Pacific Agriculture & Agri-Food Office; Louise Pasadilla, Trade Commissioner; the Alberta delegation; Jason Hale, Deputy Minister of Agriculture and Irrigation, John McDonald, Managing Director, Indo-Pacific Region, and respected voices from the Philippine food and lifestyle press while celebrity Chef JP Anglo made an appearance, who is known for championing modern Filipino cuisine and highlighting regional flavors.

Attendees were treated to a tantalizing preview of the Fire & Flavor menu, a unique culinary creation developed by Chef Luis Chikiamko and his culinary team at Discovery Primea. This menu is designed to bring out the depth and character of Canadian beef using Flame’s signature approach to open-flame cooking, promising a dining experience like no other.
As lunch was served, guests enjoyed dishes that reflected not only premium ingredients but also a shared philosophy: that good food is grounded in care, craft, and culture.
